Welsh Cakes
Ingredients:
225g Self Raising Flour
Pinch of salt
1 Teaspoon Mixed Spice
110g Butter
75g Caster Sugar
75g Fruit, pref. dried ie. sultanas
1 Egg
Zest of half a lemon(optional)

Method:
1. Add the flour, salt and spice in a bowl, rub in the butter
2.Add Sugar, lemon and fruit
3.Edd egg and bind to dough
4. role to 5mm thick and cut into 5cm disks
5 Bake on a medium griddle untill golden brown and soft in middle, dust with caster sugar
